Step:
1. Pour light cream, sugar, caramel and cocoa powder into a small pot;
2. Turn on a small fire to heat, and the sugar will melt slowly. The cocoa powder is not easy to melt, so there is no need to worry. It will gradually melt with heating;
3. Add pure dark chocolate and stir it constantly. The chocolate will melt quickly. After boiling, pay more attention to mixing to avoid paste the bottom;
4. When it is heated for about 30 minutes, the sugar solution becomes more viscous. Scratch it with a scraper to briefly expose the bottom of the pot, turn off the fire, and then continue to stir it with a scraper for a while;
5. After the sugar solution cools down slightly, put it into the silica gel flower bag, and then squeeze the sugar solution into the prepared mold. The sugar in the mold can solidify and harden and demould.
